Thai Chicken Coconut Soup

Thai-Chicken-Coconut -Soup

Winter season is just around the corner. Our ambassador Rachel Bies has put together this flavorful soup dish featuring our Feel Good Chicken Stock. 

Ingredients

  • 3 Blue Goose Boneless breasts
  • 1 stick lemongrass
  • 2 cups coconut milk
  • 2 containers Blue Goose Feel Good chicken stock
  • 1 bunch cilantro
  • 1 sweet potato, diced small
  • 1 thumb ginger, grated
  • 3 cloves of garlic, minced
  • 4 teaspoons red curry paste
  • 2 limes, cut into 1/4's and juiced
  • 1 red chili *optional
  • 1/4 fresh basil, chopped
  • 1 cup white mushrooms, sliced
  • 1 tbsp fish sauce**optional
  • 2 tbsps coconut oil

COOKING INSTRUCTIONS

  • Sauté garlic, ginger and paste in coconut oil until fragrant on low/med.
  •  Add in sweet potato until tender.
  •  Add in remainder of ingredients minus basil.  
  • Poach chicken in liquid.
  •  Bring to a boil then simmer until chicken is cooked through.  
  • Remove and dice or pull chicken.  
  • Taste and season adding more lime or spice!  
  • Serve with fresh basil.  
  • Mmmm.  Cozy and yumms.
