Our Rainbow Trout Gets the Poke Treatment from Chef Joe Friday

We are so excited to be working with Chef Joe Friday, one of the newest ambassadors on our roster. Chef Friday was born in North Carolina, raised in Okinawa, Japan and trained in French Cuisine. He is the Founder of the Underground Chef Co., an organization that runs chef battles across Canada. Earlier this year, he opened Caliilove, a Hawaiian and LA inspired quick food and café bar offering authentic Hawaiian staple food including poke.

Here’s a recipe for one of two Poké dishes Chef Friday recently made for us, featuring Blue Goose Rainbow Trout (you’re going to have to trust us, they were delicious).

Ingredients

  • 1/3 cup cooked rice
  • Marinated Blue Goose Rainbow Trout
  • 2 Tablespoon soy sauce
  • 1 diced shallot
  • 1 tablespoon siracha
  • 1 oz aioli
  • 1 table spoon edamame
  • 1 tablespoon chopped green onions
  • 1 oz kimchee
  • 1 tablespoon ginger
  • Wasbi peas
  • 7 slices of radish
