Detox Broth and Chicken Wonton Soup

The holidays have come and gone AGAIN! What a whirlwind they were too. I really expected lazy days with no real plan and lots of family time. Well some of that happened but not nearly enough. Slightly later sleep ins but otherwise I was pretty darn busy!


I worked a fare bit over the holidays, which of course is pretty typical in the catering world. Although one of the jobs was for dear friends near my cottage, that need to make everything perfect for them creates a bit more stress.

Like everyone else out there we ate, drank and socialized waaaay too much!!! The socializing part is great but the eating part eventually catches up with you.


Well now its the first week of January and I need to shed a few extra pounds and to top it off, one of our beautiful girls is getting married this weekend so lets just say the pressure’s on to fit into that dress I bought many months ago!

I’ve been finding myself looking for recipes for detox waters a lot over the last week or so and have even tried one or two. They taste pretty good but with the cold weather finally hitting us here in Toronto, I really wanted something warm and comforting.

This recipe is as close as I could get to meeting all my needs. The broth itself is extremely good for you with so many detoxifying and immune boosting ingredients.

Organic bone broth – high in magnesium, calcium ad phosphorus. The gelatin acts as a protein which helps to support the connective tissue in your body.

Enoki Mushrooms – natural antioxidants which boost the immune system Also, an ingredient in it called Proflamin ben known to slow down the growth of cancer. This is just a small sampling of its health benefits. Learn more by googling it. There are endless health benefits to this particular mushroom.

Lime juice – weight loss, skin care, improved digestion, relief from constipation, along with helping with a number of ailments such as gout and peptic ulcers.

Apple cider Vinegar -(high in Acetic Acid) weight loss, lowers blood sugar, helps in cardiovascular disease, kills some bacteria’s

These are just tidbits of info on what these ingredients have to offer. Please further your food education and do a little more reading up on them!

The combination of these ingredients creates a rich and satisfying broth that I guarantee you will make again and again!


I’ve added Blue Goose Organic ground chicken wontons to both make my husband happy and ok, ok me too!!!

If you eat strictly Paleo use Coconut Aminos is lieu of the soy sauce and roll the meet into little meatballs instead of using it with the wontons.

  • Broth

  • 8 cups good quality organic chicken stock
  • 4 green onions, trimmed and cut in half
  • 2 inch piece ginger, peeling and thickly sliced in 5 Pcs
  • 1-1/2 teaspoons chopped lemongrass
  • 2 tablespoons soy sauce or coconut aminos
  • 1 lime, squeezed for juice
  • 3 tablespoons apple cider vinegar
  • 4 baby bok choy, cleaned
  • 1 package enoki mushrooms, trimmed and washed
  • Wontons

  • 16 wonton wrappers
  • ½ lb Blue Goose Pure Foods ground chicken
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • 2 teaspoons soy sauce or coconut aminos
  • 1 green onion, finely chopped
  • ½ teaspoon grated ginger
  • Water


  1. Place all ingredients for broth, except mushrooms and bok choy in a large pot and bring to a boil. Lower and simmer for 30 min.
  2. Mix chicken, sesame oil, salt, pepper, soy sauce, green onion and ginger together. Using a chopstick blend ingredients together while adding 2 tablespoons water. Make sure to only stir in one direction in order to get the right consistency for the filling.
  3. Place 16 wontons on the counter. Add ½ teaspoon to each. Using your finger, moisten all the edges and then fold over to form a triangle. Make sure to seal all the edges.
  4. Once you’ve sealed the edges, pick it up and fold over the corners to create a wonton shape.
  5. Bring soup back to a low boil.
  6. Add Mushrooms, bok choy and wontons.
  7. Cook for 10 minutes and serve immediately with more lime, chili flakes and green onions
  8. ** if eating Paleo skip the wonton and roll the meat into little meatballs. Add in as directed for wontons.
