BG Paleo Wednesday – Crock Pot Chicken

To all of our lovely BG Fans who have taken up the Paleo plunge (like many of us at team BG have) we’ve decided to kick off a weekly Paleo – Gluten Free recipe series using Blue Goose chicken.

This week we had Blue Goose Ambassador and nutritionist Mandy King create a delicious, Gluten Free recipe using her trusty crockpot. For those who are into meal planning to help deal with the stress of a busy week, this meal is exactly what you need. Only 10 minutes prep time and enough leftover for several days!

Ingredients

  • 1 package Blue Goose organic chicken thighs
  • 1 large tin of canned tomatoes 28oz (BPA free, organic)
  • 1 red onion, roughly chopped
  • 3 cloves garlic, minced
  • 1 TBSP mixed dried herbs (I used Italian seasoning)
  • Pinch of salt & pepper

COOKING INSTRUCTIONS

  1. Place all ingredients in slow cooker, and set on lowest setting for 10 hours.
  2. Serve on its own, or over a bed of quinoa or roasted vegetables
